The Premier Cru Les Fourneaux is located on the nice slopes of the village of Fleys. Soils are fine and stony. It is one of the most intimists Premier Crus due to its small size.
The Premier Cru OPALLION comes from one of the best location of the appellation «Les Fourneaux». It is the closest plot from the Domaine Louis and Catherine Poitout located on a steep and stony slope. Full south facing, the plot has an exceptional sun rays which reflects on white stones. It is a rather young vine which expresses a lot of minerality.
A static settling until an optimal turbidity was obtained. Within 8 days the alcoholic fermentation was over and then the malolactic fermentation was entirely done. It was vinified and aged in thermoregulated vats in the Louis and Catherine’s Domaine in Fleys. Like all the wines of the Domaine Poitout, it has been vinified without oak in order to put under light the growth expression exclusively.
OPALLION is a fine wine that drives us to a world of freshness, greediness and minerality. lts first mint, honeysuckle, and white flower nose is followed by pears and apple hints. The palate reveals the basis of Chablis Premier Cru Appellation: fluidity, nice acidity, great finesse with citrus and almond flavours. This aerial wine shows a perfect balance between elegance and strength.
The minerality and acidity of Chablis Premier Cru can be spotted, in this bodied wine which will easily match cooked dishes, such as foie gras and tasty cheeses.
