Domaine des Soulié
Wine is a story. Here it merges with the history of the Soulié family rooted in these lands for 350 years and probably much more. The first of the family to be a winegrower was Antoine Soulié at the end of the 19th century. Generation after generation they have been able to adapt their know-how to the evolution of techniques but without concessions to what has always seemed essential to them.
The Domaine des Soulié, a family winery in the Saint-Chinian appellation, is located in ASSIGNAN in the Hérault at an altitude of 250 meters on clay-limestone soil. They have been cultivating 27 hectares of organic vines since 1968, respecting nature and the environment (ECOCERT). This makes the Domaine one of the forerunners in this region in terms of organic farming!
The vineyard is on average 40 years old and contains a great diversity of grape varieties. Such as, Grenache, Syrah, Cinsault, Mourvèdre, Pinot, Merlot and Malbec for the reds. Then Grenache blanc and gris, Chenin, Vermentino, Clairette, Bourbouleinc, Roussanne and Marsanne for the whites. In the wide range of wines of the domain you will find varietal wines; Grenache, Merlot, Cinsault, Malbec as well as blended wines, Le secret de Rémy, Tradition, Château Soulié des Joncs.
In the cellar, the vat room is stainless steel and temperature controlled. The harvest is done with a latest generation harvesting machine, which sorts directly on the machine using forced air, impurities (leaves, wood, withered berries, etc.) are eliminated. This allows us to have a perfect quality of reason. Then the grape is crushed before falling into the vats. All wines benefit from traditional vinification.
