I had the absolute pleasure of spending a morning with Rémy at Domaine Des Soulié in mid October 2014. Rémy is the owner, and has an amazing craft when it comes to his wine making skills. The care he gives to every part of the process is second to none and the finished results speak for themselves, producing delicate full-flavoured wines.
Domaine des Soulié, is located near the village of Assignan, in Hérault, has a family wine-making history dating to 1610, and has been farmed organically since 1960. One of the pioneers in the area in terms of organic farming, their vines have never seen chemicals. His vines sit on 25 hectres of clay-limestone soils, with grape varieties including Syrah, Grenache, Mourvedre, Malbec and Cinsault.
The winery is of stainless steel and thermo and in 2006 Rémy equipped the entire surface of the roof of his cave with photovoltaic panels. The idea being to push even further the respect for nature. Thus, the field is 100% self-sufficient with green energy levels
