The grapes are totally de-stemmed and fermented at a controlled temperature for 35 days. 12 months ageing of 50% of the wine in new oak barrels and the other half in the tank, therefore preserving the freshness of the fruit. On the nose, ripe, sweet red fruits. Very clear and fragrant. Aromatic and bold in the mouth with fine peppery notes. A truly magnificent wine

AOC Cotes du Roussillon Villages
The name comes from Anthocyanins, natural pigments that range from red, purple and blue on black grapes. During vinification of red wine, grape maceration allows gentle extraction of these pigments that give the wine lustre (they are a good anti-ageing antioxidant too apparently)! Mas Des Caprices Anthocyane 2011 is made mainly from Mourvédre, and blended with carignan and grenache. This wine is a beautiful dark purple colour, with a bouquet of black fruits (black cherry, damson), and pepper. Don't underestimate this wine, it has been aged beautifully (16 months in oak barrels), and has some punch, with lush dark fruit and spicy, peppery flavours. Best drank with food, something like a hearty meat stew, duck or a good steak. Big, bold and beautiful.
45% mourvedre, 30% carignan, 25% grenache
Mas Des Caprices Oufti 2012, (an anagram of Fitou), is a blend of mainly Mourvédre with Carignan and Grenache. A gorgeous dark purple in colour, which on the nose has a tough warm scent with aromas of ripe cherries and soft sweet dark fruits. On the palate there are deep rich notes of black ripe fruits, (black cherry, damson), it is peppery and slightly spicy, all rounded off with a hint of oak. The tannins are very soft and well balanced. All in all a tremendous wine which can be drank as an aperitif, or would marry well with any beef dish.

Mas Des Caprices R.A.S 2016. The lightest red wine from the brilliant Biodynamic vineyard Mas Des Caprices. Mirielle and Pierre Mann really have a great craft, their R.A.S (Rouge A Siroter) is IGP (Vin de Pays de L’Aude), made from young vines of Carignan, Grenache and Mourvèdre, vinification “millefeuille” by short maceration of 10 days and aged in concrete tanks. It is a nice and light fruity wine, perfect as an aperitif or with charcuterie, and grilled meats.

Mas Des Caprices Retour Aux Sources 2013 is a beautiful natural wine. A blend of Carignan, syrah and grenache noir, with a gorgeous garnet colour, and an intense nose of fresh ripe dark fruits (black cherries), and peppery earthy tones. A very pleasant structure on the palate, very soft and fruity, with black cherry and blackberries, mildly spicy with fine sweet tannins. A beautiful lingering finish. Absolutely delicious and popular with some of our London restaurant customers! Great as an aperitif, or with grilled or barbecued red meats and goes well with medium spicy food.
